Spaghetti 400g
Garlic 2 cloves
Asparagus 400g
Rocket 120g
Olive oil 1 tablespoons
Lemon Juice ½ lemon
Parmesan garnish
Black pepper
Method:
- Cook spaghetti according to packet instructions
- Cook asparagus either on griddle brush, small amount olive oil, or boil for 5 minutes until tender, then drain water
- Cook garlic in small amount of olive oil for 1 minute, add to cooked spaghetti and season
- Toss rocket with lemon juice, olive and asparagus
- Serve spaghetti, topped with the asparagus
- Garnish with shavings of fresh parmesan
