Spaghetti Spears

Recipe serves 4

Spaghetti 400g
Garlic 2 cloves                                                                     
Asparagus 400g
Rocket 120g
Olive oil 1 tablespoons
Lemon Juice ½ lemon
Parmesan garnish
Black pepper

Method:

  1. Cook spaghetti according to packet instructions
  2. Cook asparagus either on griddle brush, small amount olive oil, or boil for 5 minutes until tender, then drain water
  3. Cook garlic in small amount of olive oil for 1 minute, add to cooked spaghetti and season
  4. Toss rocket with lemon juice, olive and asparagus
  5. Serve spaghetti, topped with the asparagus
  6. Garnish with shavings of fresh parmesan

Nutritional Content per serving 400 kcal, 62g carbohydrate 12 g protein, 13 g fat
